Preparation Chef (Noodle & Dumpling Production)

Location: Amman, Jordan
Restaurant: Roe

Position Summary

We are seeking a skilled Dough & Prep Chef responsible for preparing fresh noodles, dumpling dough, and essential kitchen components that support daily service. This role is critical to maintaining Roe’s consistency, quality, and efficiency.

The ideal candidate has strong experience in dough handling and structured food preparation and understands precision, portioning, and proper storage methods.

Key Responsibilities

Dough & Noodle Production

  • Prepare fresh ramen noodles according to Roe specifications

  • Prepare dumpling wrappers and dough with correct hydration and texture

  • Ensure consistency in thickness, elasticity, and portioning

  • Manage resting, portioning, and storage processes

Kitchen Preparation

  • Prepare proteins and components such as:

    • Brisket

    • Chicken

    • Shiitake mushrooms

    • Broths and aromatics

  • Assist with marination, portioning, and labeling

  • Maintain prep schedules to support daily service

Quality & Organization

  • Follow hygiene and food safety standards

  • Ensure proper storage, labeling, and stock rotation (FIFO)

  • Maintain cleanliness and organization of prep areas

  • Monitor ingredient quality and report shortages

Requirements

  • Minimum 3 years experience in dough preparation or professional kitchen prep work

  • Strong understanding of dough hydration, texture, and resting techniques

  • Experience with noodles, dumplings, or bakery dough is a strong advantage

  • High attention to detail and consistency

  • Ability to follow precise recipes and production schedules

  • Organized, disciplined, and efficient

  • Team player with a strong work ethic
